Executive chef of Gaylord Texan's Zeppole to cook with UNT students

What:    Sascia Marchesi, executive chef and general manager of Zeppole Coastal

              Italian Restaurant at Grapevine’s Gaylord Texan Resort and Convention 

              Center, will work with University of North Texas students to create a special

              menu for Guest Chef Day at UNT’s The Club at Gateway Center

 

When:    Nov. 5 (Tuesday). Chef Marchesi will work with the students beginning at

               9 a.m., with his lunch menu served from 11 a.m.-12:15 p.m.

 

Where:   The Club at Gateway Center, located in the Gateway Center at

               801 North Texas Blvd.

 

DENTON (UNT), Texas — The executive chef and general manager of Zeppole Coastal Italian Restaurant, one of several restaurants at the Gaylord Texan Resort & Convention Center in Grapevine, will instruct University of North Texas students who are preparing for careers as managers and executives in the hospitality industry during Guest Chef Day Nov. 5 (Tuesday) at UNT’s The Club at Gateway Center.

Sascia Marchesi, a native of Milan, Italy, whose career has spanned more than 25 years, will create a menu of autumn salad with roasted red beets, roasted butternuts, toasted almonds and goat cheese; chicken piccata in a white wine and butter caper sauce; broccolini and rosemary-roasted potatoes; and an Italian caramel cream custard. He will teach and work with UNT students earning bachelor’s degrees in hospitality management.

The Club, located in UNT’s Gateway Center at 801 N. Texas Blvd., serves luncheons Mondays-Fridays for nine weeks during the fall and spring semesters. Before students can complete the bachelor’s degree, they must work two semesters in The Club to learn both dining room service management and food production management.

Marchesi has worked at Alfredo of Rome, located at EPCOT Center in Orlando, Fla.; Walt Disney World; Donatoni’s in the Hilton Waikoloa Village on Hawaii’s Big Island; and Nicola’s Ristorante Italiano in Plano. He has been a popular guest on local television cooking shows and culinary programs, and has appeared on multiple national networks, including The Disney Channel, ESPN and NBC, Marchesi became the executive chef at Zeppole in 2012.
